Quick matches are for fighting against real players in game up to 30. If you are low health, bots will also team up and kill you, even if you run. Be aware that the bots will see everything players do, making stealthing around the enemy's castle a hard task. Cooperative matches are for fighting AI bots with players up to 4-15.
